Mixed Vegetable Mornay Recipe

Ingredients

  • 2 packages frozen mixed vegetables (10 oz pkgs)

  • 1/4 cup hot water

  • 1 teaspoon salt

  • 1/4 garlic salt

  • 2 slices bread, torn into soft bread crumbs

  • 3 tablespoons butter, melted

Directions

Steam 2 packages of frozen vegetables in tightly covered saucepan, adding only about 1/4 cup hot water. Cook until crisply tender, about 5 minutes after they are completely defrosted. When dine, drain, saving liquid for Mornay Sauce, and season vegetables with 1 teas. salt, garlic salt, 2 tablespoons butter and mix gentled. Taste and season further, if desired.

Prepare Mornay Sauce

Spread cooked vegetables in greased backing dish measuring about 9 x 12 pan. Pour sauce over them and cover sauce thickly with about 2 cups of crumbs. Drizzle entire surface of crumbs with about 3 tablespoons hot melted butter. Bake 30 minutes at 350 degrees, then broil until crumbs are brown and crisp.

MORNAY SAUCE

2 tablespoons butter

1/4 cup butter

1/3 cup all-purpose flour

2 cups liquid (use liquid from vegetables & add enough cream or very rich milk to make 2 cups)

1 teaspoon Salt

Pinch of nutmeg

Pinch of thyme

1/8 teaspoon garlic salt

1/4 cup grated Parmesan cheese

2 tablespoons white wine (optional)

Melt butter in saucepan and blend in flour. Add liquid gradually, stirring constantly, and cook until thick. Add remaining ingredients and simmer about 5 minutes. Taste and season further, if desired.
