Gena’s Mini Honey Almond Bites

Ingredients

▢ ½ cup honey

▢ ½ cup all-natural almond butter unsalted

▢ 1 teaspoon pure vanilla extract

▢ 1 cup slivered almonds

▢ ½ cup unsweetened coconut flakes

▢ ½ cup raw sunflower seeds

▢ 2 tablespoons sesame seeds

▢ a couple of pinches of salt

Optional toppings

▢ sesame seeds

▢ cacao nibs

▢ sea salt

Instructions

Line a baking sheet with parchment paper.

Add honey, almond butter, and vanilla extract in a large bowl. Stir to combine.

Add almonds, coconut flakes, sunflower sesame seeds, and salt. Stir well until the nuts and seeds are evenly coated.

Pack the tablespoon with some of the mixture using a #40 size cookie scoop or tablespoon and place it on the prepared baking sheet. This should give you a rounded, dome-like shape. Alternatively, you can roll into a tight ball.

Sprinkle honey almond bites with desired toppings and refrigerate for at least 2 hours.
